Strawberry Rose Paleta

Similar to the Creamy Lavender Honey, we’re taking another look into using florals as flavorings in paletas this week with Strawberry Rose. Strawberry Rose is filled with sweet strawberries and creamy coconut milk kissed by rose buds. This is another non-dairy cream-based paleta similar to the Creamy Lavender Honey and Citrus Espresso Chocolate Fudge. For whatever reason, if paletas and popsicles were popular at tea parties, this Strawberry Rose would be the one invited to the table.

Rose Simple Syrup

A simply syrup infused with the subtle sweetness and floral taste of rose.

Ingredients

  • 1 cup water

  • 1 cup raw sugar, turbinado

  • 1 Tbs. rose buds, dried

Instructions

  1. Bring water and rose to a boil in a saucepan.

  2. Add raw sugar in the sauce pan and stir until sugar is completely dissolved.

  3. Reduce heat and simmer for 5 minutes.

  4. Remove from heat, allow to cool, strain using a strainer to capture the rose buds (discard after filtering).

  5. Use in Strawberry Rose Paleta recipe, or

  6. Bottle and refrigerate (will last about 1 week).

  7. Enjoy!

This Rose Simple Syrup is great to be used in desserts and recipes such as this paleta one, but also for cocktails (or mocktails for the little ones!). You may not think roses have anything nutritionally to offer, but in actuality, rose buds/hips contain high amounts of vitamin C, vitamin A, and manganese while providing a sweet subtle flavor in these paletas. Strawberries also contain a high amount of vitamin C, manganese, fiber, antioxidants, anti-inflammatory compounds, and phytonutrients galore. Not only do these paletas taste great, but they also have some nutrient benefits.

Where to purchase rose hips// Davidson’s Organic Rosehips, Starwest Botanicals,Nature’s Tea Leaf, local Whole Foods shop, or tea supplier shops in your area.

A creamy strawberry rose paleta filled with flavors of summer.

Ingredients

  • 1 can light coconut milk

  • 1 cup strawberries, frozen or fresh

  • 1/4 cup + 2 Tbs. of Rose Simple Syrup

  • 1 tsp. vanilla extract

  • pinch of sea salt to taste

Instructions

  1. Blend all ingredients into a Vitamix or high speed blender until well combined.

  2. Pour mixture in popsicle mold and freeze overnight or until hardened.

  3. Enjoy!

Notes

Lower sugar option// reduce the rose simple sugar to taste and add stevia for sweetness[br]Lower fat option// decrease the coconut milk and add almond milk or extra strawberries.[br]*Note this will change the texture of the original recipe.
